I read a bit about ECT (Engine Coolant Temp) sensor and learned it can be of Negative and Positive nature. But what i want to know is, if i remove the ECT sensor, i'll be able to ignite the car or not? It would be Hot start/Cold Start but my car will start or not? Also i want to ask, what other sensors i can un-plug to disable the car from igniting?

This question is way to broad to answer, as each manufacturer can do things differently. You should be able to unplug the engine temp sensor in most cases and the engine will run, but it will throw codes, and you will get terrible gas mileage. Like I said, for others sensors, it's a crap shoot. You may want to be more specific in your question, as well, because as it's written, it's too broad and may be slotted for closure. –  Paulster2 Jun 17 '14 at 9:41
